I remember 3:30 AM's trucks. In between farm jobs I worked for a little organic produce company out of Watsonville called Oranic Matters and spent a lot more nights going up to the city. I can think of two "food" stories that haven't been told yet. One would be a look at the food world from the point of view of someone who has spent a career working the wholesale produce terminals, like Jerrold Street, South City, or the mother of all terminal markets, the Hunts Point Terminal Market in the Bronx. Another interesting book to read would be a biography of Veritable Vegetable, since the ups and downs and the curves in the roads they've taken could amount to a history of the counterculture as seen through a unique lens.
